Yellow Gazpacho Recipe
When your garden overflows with yellow tomatoes make this. It is delicious and refreshing! Top with a drizzle of Creme Fraiche and some chopped avocado. Serve with crusty french bread. Yum!

Ingredients
  • 3-4 lbs peeled, seeded, and chopped yellow tomatoes
  • 1 English cucumber, seeded and chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 red onion, chopped
  • 1-2 cloves garlic, minced
  • 1 jalapeno
  • 2 Tbsp rice wine vinegar (red wine vinegar is okay but don't use as much)
  • 2-3 oz chicken stock or white wine (if it is too thick add more)
  • 1 tbsp Soy Sauce
  • 2 Tbsp basil, minced
  • 2 Tbsp cilantro
  • 2 Tbsp extra virgin olive oil
  • salt and pepper
  • Creme Fraiche
  • Avocado

Directions
  1. Place the vegetables in a blender or food processor and process until chunky.
  2. While the blender/food processor is still running, add the rice vinegar, the olive oil, soy sauce, basil, cilantro,and the wine.
  3. Season to taste with salt and pepper
  4. Chill for a couple hours to let the flavors marry.
  5. Serve in chilled bowls
  6. Garnish with a dollop of Creme Fraiche and chopped avocado.
