  • THE CAKE
  • 1 3/4 cup wholewheat flour
  • 3 tablespoons baking powder1 teaspoon ground allspice
  • 1 teaspoon salt
  • 8 tablespoons butter
  • 1 cup chopped hazelnuts
  • 2/3 cup mixed dried berries
  • 3 table spoons honey
  • 2/3 cup milk
  • 2 eggs, well beat
  • THE SHELL/FROSTING
  • 1/2 cup peanut butter
  • 1 teaspoon lemon juice
  • 3 cups confectioners sugar
  • 1/2 cup milk

Directions
  1. Preheat the oven to 325. Brush a 6 inch baking pan with butter and set aside. Mix the flour, salt, baking powder & allspice in a bowl. Rub in the butter until it is the consistency of bread crumbs. Stir in the hazelnuts and dried mixed berries. Meanwhile, warm the honey over gentle heat until melted, remove from heat and stir in the egg and the milk then pour it into the flour and mix well. Pour into your buttered pan and bake for 1 hour 45min. Use the knife trick to see if it's ready at the end of that time.
  2. heat the peanut butter over low heat (i add a dash of vanilla extract at this point) so the consistency is slightly less viscous. Whisk the confectioners sugar, lemon juice, milk and peanut butter together in a bowl then pour over top of cake!!!
