How to make it

  • brown chicken and remove form pan
  • saute onion,garlic,ginger & chilli untill onions are tender
  • add vindaloo paste & tamarind paste and cook off for a minute
  • add coconut cream and chicken stock and simmer for 10 minutes
  • return chicken to pan , add chopped tomatoes and curry leaves
  • simmer for 30 minutes and then serve on a bed of rice and naan bread on the side
