Ingredients
  • 600 grams chicken breasts or tender loins cut in half
  • 1 onion diced
  • 2 cloves garlic crushed
  • 1 tsp ginger
  • 1 red chilli, chopped
  • vindaloo curry paste to taste
  • 2 tablespoons Tamarind puree
  • 1 + 1/2 cups coconut cream
  • 1 cup chichen stock
  • 3 curry leaves
  • 3 tomatoes chopped
  • rice
  • naan bread

Directions
  1. brown chicken and remove form pan
  2. saute onion,garlic,ginger & chilli untill onions are tender
  3. add vindaloo paste & tamarind paste and cook off for a minute
  4. add coconut cream and chicken stock and simmer for 10 minutes
  5. return chicken to pan , add chopped tomatoes and curry leaves
  6. simmer for 30 minutes and then serve on a bed of rice and naan bread on the side
