Basmati Rice with Nuts and Dried Fruit

- 1-1/2 cups uncooked basmati rice shopping list
- 2 tablespoons cooking oil shopping list
- 1 small white onion thinly sliced shopping list
- 1 tablespoon minced ginger shopping list
- 2 teaspoons minced garlic shopping list
- 2 jalapeno peppers minced shopping list
- 1/2 teaspoon garam masala shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon white pepper shopping list
- 3 cups chicken broth shopping list
- 1/4 cup diced dried apricots shopping list
- 1/4 cup coarsely chopped toasted walnuts shopping list
- 1/4 cup toasted cashew halves shopping list
- 1/4 cup raisins shopping list
- 2 tablespoons chopped green onion shopping list
- 2 tablespoons toasted coconut shopping list
- 1/4 cup plum sauce shopping list
How to make it
- Soak rice in water to cover for 30 minutes then drain well.
- Heat saucepan over medium heat then add oil and onion and cook 1 minute.
- Add ginger, garlic, chilies, garam masala, salt and pepper the cook 10 seconds
- Add rice and cook stirring until mixture is well coated with oil about 1 minute.
- Add broth and bring to a boil then cook uncovered over medium heat.
- Continue cooking until liquid drops to level of rice then cover and simmer on low 15 minutes.
- Remove rice to serving platter and sprinkle apricots, nuts, raisins, onion and coconut over top.
- Serve with plum sauce on the side.
