How to make it

  • Soak rice in water to cover for 30 minutes then drain well.
  • Heat saucepan over medium heat then add oil and onion and cook 1 minute.
  • Add ginger, garlic, chilies, garam masala, salt and pepper the cook 10 seconds
  • Add rice and cook stirring until mixture is well coated with oil about 1 minute.
  • Add broth and bring to a boil then cook uncovered over medium heat.
  • Continue cooking until liquid drops to level of rice then cover and simmer on low 15 minutes.
  • Remove rice to serving platter and sprinkle apricots, nuts, raisins, onion and coconut over top.
  • Serve with plum sauce on the side.
