Creamy Stir-fry Chicken

- 3 tbsp oil shopping list
- 1 cup broccoli flowerets shopping list
- 1 cup snow peas shopping list
- 3/4 cup 2 inch julienne-cut carrots shopping list
- 1 med onion roughly chopped shopping list
- mushrooms....and any other veggies you want shopping list
- 1 or more garlic cloves, minced shopping list
- 3 chicken breast halves, skinned, boned and cut into 1 inch pieces shopping list
- 1/2 cup Mayo shopping list
- fresh ground ginger (to taste) shopping list
- 1-2 tbsp soy sauce shopping list
- 2 TBs rice vinegar shopping list
- 1/4 Cup ketchup shopping list
- 1/4 tsp sugar shopping list
- (optional, tabasco, or other hot sauce or 1 tsp crushed red pepper flakes) shopping list
- Hot cooked white rice. shopping list
How to make it
- In a large skillet or Wok heat 2Tbsp oil over meduim-high heat.
- Stir-fry chicken until no longer pink. Remove chicken from skillet or Wok and set aside.
- Add 1 Tbsp oil to skillet or Wok and add garlic, onion and sauté 30 seconds.
- Add broccoli, snow peas and carrots(and other veggies) and Stir-Fry until crisp tender.
- Add chicken to the skillet or wok. lower heat.
- In mixing bowl:
- Stir ginger, Mayo, Soy Sauce, vinegar, ketchup, and Mix well.
- Add sauce to chicken/Veggie mixture.
- Heat until just bubbling.
- Serve immediately over hot white cooked rice.
- Other Options: I have added slivered almonds. Just adjust vegetables, meats and such to suite your taste.
