How to make it

  • In a large skillet or Wok heat 2Tbsp oil over meduim-high heat.
  • Stir-fry chicken until no longer pink. Remove chicken from skillet or Wok and set aside.
  • Add 1 Tbsp oil to skillet or Wok and add garlic, onion and sauté 30 seconds.
  • Add broccoli, snow peas and carrots(and other veggies) and Stir-Fry until crisp tender.
  • Add chicken to the skillet or wok. lower heat.
  • In mixing bowl:
  • Stir ginger, Mayo, Soy Sauce, vinegar, ketchup, and Mix well.
  • Add sauce to chicken/Veggie mixture.
  • Heat until just bubbling.
  • Serve immediately over hot white cooked rice.
  • Other Options: I have added slivered almonds. Just adjust vegetables, meats and such to suite your taste.
