Guilt-Free Muffins

- 2 c bran (bran cereal, bran germ…whatever) shopping list
- 1½ c nonfat yogurt (flavour of your choice…we like Yoplait fat free vanilla) shopping list
- 3 c flour* shopping list
- 3 T baking powder shopping list
- 1 t baking soda shopping list
- Pinch of salt shopping list
- 1 1/2 c Splenda® (or regular, lightly packed brown sugar) shopping list
- 2 granny smith apples (peeled, cored, diced or shredded) shopping list
- ½ c whole, raw cashews (or any other nut you prefer) shopping list
- ½ c whole, raw sunflower seeds shopping list
- 1 c raisins shopping list
- ½ c unsweetened cranberries shopping list
- 2 eggs (or 3 egg whites) shopping list
- ¼ c olive oil shopping list
- 1¾ c 1% (or skim) milk shopping list
How to make it
- In a small bowl, combine the first two ingredients and set aside.
- In a large bowl, combine the next 10 (dry ingredients) and mix thoroughly
- Beat together the final 3 ingredients in a separate bowl.
- Pour liquid over bran mixture. Stir thoroughly without beating.
- Quickly pour entire liquid mixture over flour and stir just until moistened. (I use a spatula and a “down-up-and-over motion).
- Fill 24 large muffin cups full. Bake for 20 minutes, checking for doneness before removing from oven. Cool for 10 minutes, then remove from muffin tins and allow to cool completely before storing. Keep in an airtight container and eat within 5 days.
- ** I mix white flour with equal parts wheat germ and seven grain cereal for these muffins.
- P.S. These are great as giant muffins (bake in 8 [or so] small meat pie shells)
