YUKON GOLD CHEESY POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Staley Estate in Wills Point, Texas in 1982.

Ingredients
  • 2 pounds Yukon gold potatoes grated with skin on
  • 16 ounces sour cream
  • 1/4 cup parsley
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 10 ounces cheddar cheese soup
  • 10 ounces cream of mushroom soup
  • 1/2 cup butter melted
  • 1 small can green chilies diced
  • 1/2 cup white onion chopped

Directions
  1. Preheat oven to 350.
  2. Toss grated potatoes with parsley and black pepper.
  3. Heat olive oil in large skillet then cook potatoes in skillet until crispy and brown.
  4. Remove pan from heat and spray rectangular baking dish with cooking spray.
  5. Place crispy potatoes in baking dish and pour buttery spread over top.
  6. Mix remaining ingredients and pour over top and mix with potatoes.
  7. Bake uncovered for 90 minutes.
