  • Bake at 350 until done (about an hour).
  • When it looks close to being done, maybe 15 minutes, I spread either BBQ sauce or ketchup over the top.

    I make a mean meatloaf using beef & pork and this recipe sounds very similar. Having never fixed bear before - comes from city living too long - I'm anxious to see how it turns out. I didn't have a green pepper on hand so I left that part out. Maybe I should have substituted a small can of green chiles? Anyway it's in the oven as I write this and so far smells heavenly. Worst case scenario is two dogs I know will have a gourmet dinner...(Not likely!) Thanks Griz

    I have experienced Bear Meat in my youth. Nothing good that I could say about it at that time. If I had it to do all over again, this is how I would want it made. Thank you for sharing it. I will make it if I happen across bear meat again. Promise!
