Ingredients
  • 2 boxes of your fav pierogis
  • veggies of your choice
  • 3 yellow squash sliced or chunked
  • 1/2 red onion slices
  • 1 bag (5-7) large bulb green onions using whole bulb and part of green
  • 3 cloves diced garlic
  • 2 c. chicken broth
  • butter
  • lucini olive oil
  • optional 1/2 c. white table wine
  • sea salt to taste
  • Chili powder to taste(optional, but good)

Directions
  1. I cooked both dishes at the same time so start your water boili in salted waterng in your spaghetti pot. Must be a rolling boil.
  2. Add pierogis and cook according to directions.
  3. Drain.
  4. In a saucepan with oil and butter brown the pierogis on both sides.
  5. Meantime add 2 c. chicken broth, wine if used ,to a warmed pan in to which you have added oil and butter.
  6. Add all veggies, onions first for 1 minute, then others. on medium heat and cover .Cook until still firm and not squishy. Adding garlic after onion. Seasonings to your taste.
  7. Plate with drained pieogies and veggies on side.
  8. Serve with biscuits , rolls or pop-overs.
  9. That's it!
