Very Berry Cookies Recipe

How to make it

  • Preheat oven to 375.
  • In a large mixing bowl with an electric mixer cream butter and sugar.
  • Add yolk, vanilla and lemon juice then beat well.
  • Mix flour, baking powder, baking soda and salt.
  • Add flour mixture to bowl and mix until combined noting that it will be dry.
  • Add chopped strawberries and with a mixer beat 20 seconds or until combined.
  • Drop by rounded tablespoonfuls onto parchment lined or greased cookie sheets.
  • Flatten with slightly wet fingers.
  • Lightly press 1 slice strawberry and 2 blueberry pieces into each cookie then bake 10 minutes.
  • Remove cookies to a rack to cool.
