How to make it

  • Place butter and sugar in blender and process until well combined.
  • In another bowl dissolve soda in lemon juice then mix in eggs and vanilla.
  • Beat butter mixture and egg mixture together then gently add flour and salt.
  • Fold in pears then set aside.
  • Mix crumb ingredients cutting in butter with pastry blender until mix resembles coarse crumbs.
  • Spoon 1/2 of the batter into greased loaf pan then sprinkle with 1/2 crumb mixture.
  • Gently spoon in remaining batter and sprinkle with remaining crumb mixture.
  • Press crumbs gently into surface of batter then bake at 375 for 75 minutes.
  • Cool 5 minutes in pan then remove bread from pan and cool completely on cooling rack.
