Balsamic Chicken Fajita Wraps Recipe
These are incredible. I leave the slaw off of mine, but that is strictly a taste preference. Enjoy.

  • 3 boneless skinless chicken breasts cubed
  • 4 tablespoons balsamic vinegar
  • 2 tablespoons lime juice
  • 4 tablespoons olive oil divided
  • 3 cloves garlic minced
  • 1 tablespoon butter
  • 1 medium yellow onion diced
  • 1/2 red bell peppers diced
  • 1/2 yellow bell peppers diced
  • 1 cup sliced mushrooms
  • 1/2 cup broccoli slaw cut to 1/2" lengths
  • 1 cup cooked canned black beans drained
  • 1/2 cup chunky salsa
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 ripe avocado peeled seeded and diced
  • 3/4 cup sour cream
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 flour tortillas
  • Grated pepper jack cheese for garnish

Directions
  1. Combine vinegar, lime juice, 2 tablespoon olive oil and minced garlic in a plastic bag.
  2. Add chicken and let it marinate in the refrigerator for two hours.
  3. In large skillet melt remaining olive oil and butter together.
  4. Remove chicken from marinade and discard marinade.
  5. Sauté chicken, onion, peppers, mushrooms and slaw over medium high heat 10 minutes.
  6. Stir often then reduce heat and add remaining ingredients except avocado, cream and tortillas.
  7. Simmer on medium low another 5 minutes then stir in avocado, sour cream, salt and pepper.
  8. Fill tortillas with mixture and garnish with grated cheese then serve immediately.
