Ingredients
  • 375g of good quality chocolate (70% cocoa is good)
  • 500g of caster sugar
  • 375g of butter
  • 225g of plain white flour
  • 6 eggs
  • A pinch of salt
  • A dash of vanilla essence

Directions
  1. Line a baking tray with greaseproof paper and butter it.
  2. Break up the chocolate and cut the butter into small chunks. Melt both in the microwave (carefully: If you do it for too long the butter will separate. Stirring will help melt the chocolate).
  3. In a mixing bowl, break the eggs into the sugar and add the vanilla essence and salt. Mix thoroughly.
  4. Add the melted chocolate mixture and stir again.
  5. Finally, stir in the flour.
  6. Spoon the mixture into the tray and spread to the corners.
  7. Bake in the oven for about 20-25 minutes on 180ÂșC until the top has gone golden brown, but the centre is still gooey.
  8. The brownies will solidify over time, to re-moisten, microwave for a few seconds and sprinkle over some icing sugar to serve :)

I think that brownies are spoiled by the addition of nuts, but some people like it that way. If you want, you can add 250g of hazelnuts or similar.
