How to make it

  • Melt butter in a large saucepan over medium heat then add onions and cook until pale.
  • Add curry powder and cook while continuously stirring.
  • After 2 minutes add broth, apples and 1/4 teaspoon salt then bring to boil.
  • Reduce heat to medium low and simmer stirring often for 45 minutes.
  • Take saucepan off stove and allow soup to cool then put it into the refrigerator.
  • After soup cools transfer in batches to a blender and blend until very smooth.
  • Run the blended soup through a strainer then whisk in the lemon juice.
  • Add yogurt and cayenne then put in refrigerator for at least one hour then serve cold.
