Apple Soup

- 2 tablespoons butter shopping list
- 1 medium yellow onion peeled and chopped shopping list
- 1 tablespoon curry powder shopping list
- 4 cups vegetable broth shopping list
- 3 medium apples peeled cored and chopped shopping list
- 2 medium granny smith apples peeled cored and chopped shopping list
- 1/2 teaspoon sea salt shopping list
- 1 large lemon juiced shopping list
- 2 cups yogurt shopping list
- 1/2 teaspoon cayenne pepper shopping list
How to make it
- Melt butter in a large saucepan over medium heat then add onions and cook until pale.
- Add curry powder and cook while continuously stirring.
- After 2 minutes add broth, apples and 1/4 teaspoon salt then bring to boil.
- Reduce heat to medium low and simmer stirring often for 45 minutes.
- Take saucepan off stove and allow soup to cool then put it into the refrigerator.
- After soup cools transfer in batches to a blender and blend until very smooth.
- Run the blended soup through a strainer then whisk in the lemon juice.
- Add yogurt and cayenne then put in refrigerator for at least one hour then serve cold.
