Apricot Candy Roll Recipe
I got this recipe from my Aunt Minnie who has been making these as long as far back as I can remember. The apricots and peanut butter are a very special taste combination. Greatness.

Ingredients
  • 3 cups granulated sugar
  • 1/2 cup creamy peanut butter
  • 1 cup dried apricots chopped
  • 1 cup milk
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract

Directions
  1. In saucepan mix all ingredients except vanilla then stir over medium heat until well blended.
  2. Bring to a boil and cook without stirring until mixture reaches 238 degrees on thermometer.
  3. Remove from heat and cool until outside of pan feels lukewarm.
  4. Add vanilla and beat until creamy and easy to handle.
  5. Turn out on buttered platter and work with hands until very smooth and satiny.
  6. Shape into 2 long rolls and chill at least 3 hours then slice into thin pieces.
