Apricot Candy Roll

- 3 cups granulated sugar shopping list
- 1/2 cup creamy peanut butter shopping list
- 1 cup dried apricots chopped shopping list
- 1 cup milk shopping list
- 1/2 teaspoon salt shopping list
- 2 teaspoons vanilla extract shopping list
How to make it
- In saucepan mix all ingredients except vanilla then stir over medium heat until well blended.
- Bring to a boil and cook without stirring until mixture reaches 238 degrees on thermometer.
- Remove from heat and cool until outside of pan feels lukewarm.
- Add vanilla and beat until creamy and easy to handle.
- Turn out on buttered platter and work with hands until very smooth and satiny.
- Shape into 2 long rolls and chill at least 3 hours then slice into thin pieces.
