Lemon Poppy Seed Pancakes With Honey Butter Recipe
These are extremely tasty. My friend who runs a successful bed and breakfast in East Texas has these on her menu and they always get glowing reviews. Enjoy

  • 3 cups unbleached white flour
  • 1 cup quick not instant oatmeal
  • 1 cup sour cream
  • 5 eggs
  • 4 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons poppy seeds
  • Zest of 2 lemons
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon oil
  • 1-1/2 cups water
  • 1-1/2 cups milk
  • Honey butter:
  • 1 stick butter
  • 1/2 cup honey

Directions
  1. To make honey butter melt butter then add honey slowly while whipping mixture then cool.
  2. Mix all dry ingredients first then add eggs, sour cream, milk and water.
  3. Beat until fully mixed then add lemon zest, lemon oil and poppy seeds and mix thoroughly.
  4. After batter has sat for 30 minutes add more liquid if necessary.
  5. Spoon batter on buttered grill and cook until bubbles form on top then turn and brown other side.
  6. Top with honey butter and serve immediately.
