i like salmon alot, i think its one of the most versatile fish you can come across. this recipe was inspired after eating fish sticks for kids and i realised we needed an adult version with some class.

Ingredients
  • 6 center cut salmon fillets
  • 1 cup of self raising flour
  • 1/2 cup of cornstarch
  • 1 tsp of salt
  • water
  • oil for deep frying- peanut is ok, but i prefer Canola
  • 1 cup your choice of marinara or roasted garlic alfredo sauce
  • chopped parsley

Directions
  1. you want to cut you fish fillets into 4 pieces, so the first cut should slice the fillet into 2 thin pieces then slices the 2 pieces again to make 2 thinned pieces- hence sticks
  2. mix the self raising flour, cornstarch, salt and water to form a nice and thick batter, it should be the consistency of cake batter.
  3. dip your fish sticks into the batter and deep fry in hot oil till the batter is crispy and golden brown
  4. drain on paper towels
  5. heat up the marinara or alfredo sauce
  6. drizzle the warm sauce over the fish sticks and garnish with the parsley
