Semolina Halva

- 1/2 cup ghee(clarified butter) shopping list
- 1 cup semolina shopping list
- 1 1/2 to 2 cup sugar(according to taste) shopping list
- 3 cups water shopping list
- Pinch of yellow/red food color(optional) shopping list
- 1/2 cup nuts {almonds/pistachio (blanched & sliced) + raisins + coconut(thinly sliced)} shopping list
- 4-5 green cardamom(seeds only) shopping list
How to make it
- Heat 2 tbsp of ghee in a frying pan or wok.
- Add semolina and fry on medium heat until golden in colour and it gives out an aroma of roasting semolina.
- Remove from the pan and keep aside.
- Combine remaining ghee,sugar and water in the same pan and cook on medium heat until sugar is dissolved.If using food color,add along with water.
- Add cardamom and 3/4th of the nuts;cook for 2-3 minutes.
- Add semolina and cook for 2-3 minutes,stirring frequently(make sure there are no lumps).
- When the mixture becomes thick and begins to come off the pan,take it out in a serving bowl.
- Garnish with remaining nuts.Serve hot.
