How to make it

  • Parboil potatoes for 10 minutes
  • While potatoes are cooking
  • Finely chop mushrooms in a food processor (about crumb consistency)
  • Fry the mushrooms in 1 tsp of the butter for 5 minutes
  • Remove from frying pan
  • Add sambal oelek and soya sauce to the mushrooms
  • Mix well and place in bowl
  • Take potatoes out of water
  • Carefully slice about 1.5 cm (or 1/2 inch) thick
  • Fry potato slices in butter and olive oil mix until golden on one side
  • Turn and add some grated cheese on top of each slice
  • Take potatoes out of frypan when golden brown on both sides
  • About the same time as when the cheese has melted
  • To serve
  • Place the mushroom mix with a spoon in the centre of a serving platter
  • Place cheesey potato slices on the platter
  • To eat
  • Place a spoonful of the mix on the potato slice and bite…yum
