Grandmamas Vegetable Soup

- 1 fist-sized ham hock shopping list
- 2 c water shopping list
- 6-8 fresh tomatoes, chunked (if very acidic add 2t sugar) shopping list
- 3/4 c small butterbeans - fresh, cooked for 20 minutes shopping list
- 1/4 c okra - fresh, cooked for 20 minutes shopping list
- 3/4 c corn - fresh, cooked for 15 minutes shopping list
How to make it
- Bring the water and ham hock to boil in a large pot, then reduce to simmer and cook for one hour.
- Add tomatoes, bring back to boil, then simmer for one more hour.
- About 20 minutes before eating add the butterbeans and okra, then the corn. (Even if you don't like okra--add it! It's the secret ingredient.)
- Add black pepper liberally and salt to taste.
- This keeps for several days in the refrigerator and freezes exceptionally well! You can easily double or triple the recipe (but you need only one ham hock)
