How to make it

  • Bring the water and ham hock to boil in a large pot, then reduce to simmer and cook for one hour.
  • Add tomatoes, bring back to boil, then simmer for one more hour.
  • About 20 minutes before eating add the butterbeans and okra, then the corn. (Even if you don't like okra--add it! It's the secret ingredient.)
  • Add black pepper liberally and salt to taste.
  • This keeps for several days in the refrigerator and freezes exceptionally well! You can easily double or triple the recipe (but you need only one ham hock)

    Glad that I found this...

    Had a ham for part of the Holidays this week-end,needed something different to use the ham bone and trimmings with...cold here today,this will work quite nicely.
