CHICKEN CHILI

- 1 tsp. olive oil shopping list
- ½ Lb. ground chicken shopping list
- 1 small yellow onion, chopped ( about ½ cup ) shopping list
- ½ cup chopped carrot shopping list
- 3 cloves garlic, minced shopping list
- 3 cups cooked red kidney beans shopping list
- 2 cups chopped canned plum tomatoes shopping list
- 2 Tbs. molasses shopping list
- ½ tsp. black pepper shopping list
- ½ tsp. hot chili powder shopping list
- 2 Tbs. fresh lemon juice shopping list
- 2 Tbs. chopped fresh parsley shopping list
How to make it
- 1)In a large skillet, heat oil over medium-high heat. Add chicken and saute until no longer pink, about 5 minutes.
- 2)Add onion and carrots to skillet; cook, stirring constantly, until vegetables are tender, about 7 minutes. Add garlic and cook for 1 minute longer.
- 3)Add beans, tomatoes with liquid, molasses, pepper and chili powder to skillet. Reduce heat to low and simmer, stirring occasionally, until mixture thickens, about 30 minutes. Stir in lemon juice and parsley. Serve immediately.
