PENNE WITH SAUSAGE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baxter Estate in Euless, Texas in 1989.

Ingredients
  • 1-1/2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 white onion chopped
  • 1/2 carrot diced
  • 1 bay leaf
  • 1/3 cup bacon chopped
  • 1/2 pound spicy hard Italian sausage
  • 14 ounce can plum tomatoes
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound penne pasta
  • 1 tablespoon fresh marjoram chopped

Directions
  1. Combine butter and oil in large skillet and cook onion, carrot and bay leaf in butter.
  2. Add bacon and sausage and cook until browned stirring frequently.
  3. Drain half the can of tomatoes and add them to the pan.
  4. Season with salt and pepper then simmer 30 minutes over a low heat adding stock gradually.
  5. Cook penne in boiling lightly salted water until just done then drain well.
  6. Add marjoram to sauce and toss together with cooked penne.
