Summer White Bean Soup With Salsa

- * for the salsa: shopping list
- * 2 ripe tomatoes shopping list
- * ½ red onion shopping list
- * 8 basil leaves shopping list
- * 1 Tbsp olive oil shopping list
- * salt and pepper shopping list
- * for the soup: shopping list
- * 1 600g/ 21oz can of cooked cannellini beans , or any other white bean shopping list
- * ¾ ltr water, approximately shopping list
- * 4 Tbsp olive oil shopping list
- * garlic cloves, peeled & chopped shopping list
- * ½ tsp red chilli flakes , optional shopping list
- * 2 basil leaves shopping list
- * salt and pepper shopping list
- * 5 1⁄3 oz parmesan cheese, grated shopping list
- * a sprig of basil, to garnish shopping list
- * 1 chopping board shopping list
- * 1 small knife shopping list
- * 1 large knife shopping list
- * 1 medium pot with lid shopping list
- * 1 colander shopping list
- * 1 pair of scissors shopping list
- * 1 wooden spoon shopping list
- * 1 spoon shopping list
How to make it
- Step 2:
- Prepare the beans
- Drain the white beans, using a colander and rinse briefly.
- Step 3:
- Combine the ingredients
- Add four tablespoons of olive oil into the cooking pot, then add the garlic and the red chilli. Tear two of the basil leaves into large fragments and also add to the pot.
- Cook over a low heat for 2 to 3 minutes, stirring occasionally.
- Step 4:
- Cook the beans
- Add the white beans and then enough water to cover the ingredients and allow to cook, covered with a pan lid, over a low to medium heat.
- Use a wooden spoon to crush about a quarter of the beans against the side of the pot. This will help to thicken the soup. Cover with the lid again and allow to heat through. As the soup comes to the boil, turn down the heat and simmer for 15 minutes uncovered.
- Step 5:
- Make the salsa
- To make the salsa, core the tomatoes and chop finely. Chop the onion finely and cut the basil leaves into strips.
- Stir the mixture together well then add one tablespoon of olive oil and stir. Season with salt and pepper and stir again.
- Step 6:
- Serve
- Transfer the white bean soup to a bowl and add a generous helping of salsa on top.
