Leek And Sausage Stew

- 1 large onion shopping list
- fresh black pepper shopping list
- 2tbsp cooking oil shopping list
- 2 leeks shopping list
- pint of cream shopping list
- 1 to 1 ½ pts chicken and/or vegetable stock with 1tbsp sage mixed in* shopping list
- 3 bay leaves shopping list
- juice of one lemon shopping list
- pack of eight sausages shopping list
- serve with either bread and butter, pasta, or mashed potato shopping list
How to make it
- Put sausages on to cook in grill.
- Put oil in pan on low heat.
- Roughly chop onion.
- Wash leek and cut into thin slices.
- Remember to keep an eye on the sausages and turn when appropriate.
- Fry leek and onion until almost browned.
- Add a lot of ground black pepper (grind from mill for about a minute) and stir in.
- Remove sausages from grill and cut into four using diagonal cuts (approximately 45 degrees angle).
- Add chopped sausages.
- Add stock/gravy and additional water if required and bring to the boil.
- Add cream, lemon juice and bay leaves.
- Leave to simmer on low heat and while preparing bread/potato/pasta to serve.
- Once accompaniment is ready, the dish can be served onto plates. I suggest serving along with some buttered and grilled focacia bread and sprinkle with chives.
