  • Method:
  • 1)In a nonreactive saucepan, combine the cherries, sugar, and Kirsch. Bring to a boil over high heat. Reduce the heat to low and simmer, stirring occasionally, for 10 minutes.
  • 2)Pour the mixture into a food processor or blender and puree until smooth.
  • 3)Strain through a fine sieve and chill.
  • 4)Attractively arrange the fruit over a large platter and pass the coulis separately. Serve with wheat kernel bread and creamy Robiola cheese.

  • Wine: Schramsberg Cuvee de Pinot sparkling wine
