The cherry coulis is trat and refreshing, an elegant addition to a simple plate of seasonal fruist. With wheat bread and creamy Robiola, this fruit salad becomes a meal. Adapted to Idone's "Salad Days" 1989

  • Cherry Coulis:
  • 1 quart Bing Cherries, stemmed and pitted
  • ½ cup superfine sugar
  • ¼ cup Kirsch ( Cherry Brandy )
  • Fruit:
  • Any combination of:
  • Raspberries
  • Blackberries
  • Blueberries
  • Sectioned seed-less oranges
  • Sliced white peaches
  • Sliced yellow peaches
  • Sliced plums
  • Grapes

Directions
  1. Method:
  2. 1)In a nonreactive saucepan, combine the cherries, sugar, and Kirsch. Bring to a boil over high heat. Reduce the heat to low and simmer, stirring occasionally, for 10 minutes.
  3. 2)Pour the mixture into a food processor or blender and puree until smooth.
  4. 3)Strain through a fine sieve and chill.
  5. 4)Attractively arrange the fruit over a large platter and pass the coulis separately. Serve with wheat kernel bread and creamy Robiola cheese.
  6. Calories: Coulis only 260 peer serving
  7. Wine: Schramsberg Cuvee de Pinot sparkling wine
