How to make it

  • Use a 23-24 cm round pan
  • cream butter then add sugar and beat well
  • Add eggs one at a time
  • Mix flour, baking powder and vanilla sugar
  • Add to creamed mixture with lemon juice and peel
  • If too stiff, mix in a bit of water or milk to achieve a dough that easily drops off a spoon
  • Smooth into a greased and floured cake pan
  • Preheat oven to 200C
  • Wash, peel, core and cut up plums
  • Place into dough all around in a concentric pattern
  • Bake 30 mins at 200C ( 400F ) then 10 minutes more at 175C ( about 330F )
  • Cool and dust heavily with sugar
  • I have not made this and and would decrease the baking temp to 350F instead of 400 initially!
