Thai Open Faced Omelet Recipe

Ingredients
  • 3 eggs
  • 1 tablespoon cilantro minced
  • 1/3 of a onion sliced
  • 1/2 of a tomato sliced
  • 1 teaspoon white pepper
  • 1 teaspoon mushroom flavored soy sauce or fish sauce
  • 2 tablespoon canola oil

Directions
  1. Combine all ingredients in a bowl
  2. Heat a med size skillet on high, add the oil. When it's hot, pour egg mixture into pan. Set heat to low, flip omelet when brown on one side, and the egg has set in the pan. If you can't flip it, slide the egg onto a plate and then flip plate over into the pan. Be careful of hot oil. Remove from heat after a few minutes. You can fold this in half like a standard omelet. Serve with hot rice.
