  • 6 slices bacon -- cut into 1-2" pieces
  • 3 pounds rump roast, trimmed -- cut into 1" cubes
  • 1 large carrot -- peeled and sliced
  • 1 medium onion -- sliced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons flour
  • 10 ounces beef broth -- 1 can, condensed
  • 2 cups burgundy -- or red wine
  • 1 tablespoon tomato paste
  • 2 cloves garlic -- minced
  • 1/2 teaspoon thyme -- whole
  • 1 whole bay leaf
  • 1/2 pound small white onions -- peeled
  • 1 pound fresh mushrooms -- sliced

Directions
  1. Cook bacon in large skillet until crisp. Remove and drain. Add beef cubes and brown well. Place browned beef cubes in slow cooker. Brown carrot and onion. Season with salt and pepper. Stir in flour. Add broth, mix well and add to slow cooker. Add cooked bacon, wine, tomato paste, garlic, bay leaf, onions and mushrooms. Cover cook on Low 10 to 12 hours or on High for 5 to 6 hours.

Oh I love this dish ... but to my amazement I don't actually have a recipe for it already... it's been like winter here for the last few days so the slow cooker might well be coming out for this!

I love beef bourgignonne...it was the first meal I made for my mom on Mother's Day. I was ten or so. She had to buy the wine and brandy I used to flame the beef cubes, but it remains a family favorite to this day.

Your recipe is like the one I use to have
(now lost after moving) I am so pleased to
have found You and this recipe! and~ for
using this recipe with a 'Crock-Pot'! I use to bake it
and also used 'Beef Consummae'(sp?) instead of
the 'Beef Broth'~ the Beef flavor is a bit more
intense with the other~ I will cut the recipe
in half for my tiny Crock-Pot for 'One'!

Fantastic! I spent forever perfecting my own slow cooker recipe for this and it's nearly identical to yours! 5!
You did leave out the most important part. What to do with the rest of the wine?
Pull up a comfortable chair in the general vicinity of the crock pot and taste test wine repeatedly until cooking time is through. And make sure you have an extra bottle or two to serve with dinner!
