Chocolate Truffle Cookies Recipe
This recipe makes 4 dozen cookies. In my house, these cookies are gone within the day! They take a bit of time, but these cookies are worth it, they are truly a chocolate lover's dream!

Ingredients
  • 4 squares unsweatened (one ounce) chocolate baking squares
  • 2 cups semi-sweet chocolate chips, divided
  • 1/3 cup butter or margerine
  • 1 cup sugar
  • 3 eggs
  • 1-1/2 tsps vanilla
  • 1/2 cup all purpose flour
  • 2 tbsp baking cocoa
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • confectioner's sugar

Directions
  1. 1. In a microwave or double broiler, melt unsweetend chocolate, 1 cup of the chocolate chips and butter. Cool for 10 minutes.
  2. 2. In a mixing bowl, beat sugar and eggs for 2 minutes. Beat in vanilla and the chocolate mixture.
  3. 3. In a seperate bowl, Combine flour, cocoa, baking powder and salt; beat into chocolate mixture. Stir in the remaining chocolate chips.
  4. 4. Cover and chill for at least 3 hours.
  5. 5. Remove about a cup of dough. With lightly floured hands, roll into 1-inch balls and place on ungreased baking sheets.
  6. 6. Bake at 350 for 10 to 12 minutes or until lightly puffed and set. Watch carfully, they burn quickly!!
  7. 7. Cool for 3-4 minutes before removing from pan to a wire rack to cool completly.
  8. 8. Repeat with remaining dough.
  9. 9. When cooled, dust with confectioner's sugar.
  10. Enjoy :)
