Pineapple Almond Coffeecake

- 1/3 cup finely chopped almonds shopping list
- 1 cup granulated sugar shopping list
- 1/2 cup butter softened shopping list
- 1/2 cup milk shopping list
- 1/2 teaspoon almond extract shopping list
- 15 ounces ricotta cheese shopping list
- 2 eggs shopping list
- 2-1/2 cups all purpose flour shopping list
- 1 cup dried pineapple chopped shopping list
- 1 cup chopped almonds toasted shopping list
- 3 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Preheat oven to 350 then grease a tube pan.
- Coat pan with 1/3 cup finely chopped almonds.
- Beat sugar, butter, milk, extract, cheese and eggs in large bowl on low until blended.
- Beat on medium speed 2 minutes scraping bowl occasionally.
- Beat in remaining ingredients then spread in pan and bake 60 minutes.
- Cool 20 minutes then remove from pan and place on wire rack.
- Sprinkle with powdered sugar and serve warm or at room temperature.
