A great way to use large zucchini. Many people don't even know it is zucchini. They assume it is Dutch Apple Pie!

Ingredients
  • 5 c. peeled and diced zucchini
  • Dry ingredients:
  • 1 1/2 c. sugar
  • 2 T. flour
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. cream of tartar
  • dash salt
  • dash nutmeg
  • 2 T. lemon juice
  • Crumb top:
  • 3/4 c. flour
  • 1/2 c. sugar
  • 1/2 c. firm butter or margarine
  • 1 uncooked pie shell

Directions
  1. Preheat oven to 400
  2. Large zucchini works best. Cut ends off, peel, slice in half, remove seeds & stringy strands, and slice zucchini into 1/4 inch. sections. (You may need to cut halves smaller if your vegetable is really wide. This preparation makes them resemble apples slices.)
  3. Boil 5 minutes or until tender.
  4. While zucchini is boiling mix dry ingredients together.
  5. Drain zucchini and add dry ingredients.
  6. Pour zucchini mixture into pie shell
  7. Place crumb topping ingredients in a bowl and cut with pastry blender until well blended
  8. Top pie with topping and place on bottom rack for 45-50 minuets
