Ingredients
  • 4-6 fish steaks halibut,cod,grouper or red snapper
  • 4-6 cloves of garlic finely minced
  • 1 teaspoon cumin
  • 3/4 teaspoon cayenne pepper
  • juice of 1 lime
  • juice of 1 lemon
  • mix all ingredients except fish. in a deep dish place fish at bottom and pour marinade mix and lput in refrigerator for 2 hrs.

  • 3-4 tablespoons good quality olive oil
  • 3 garlic cloves finely minced
  • 1 large red onion cut in half and sliced thinly
  • 2-3 large potatoes peeled and thinly sliced
  • 1 large can crushed tomaotes
  • juice of one lemon or more if desired
  • salt to taste
  • 1 teaspoon cayenne
  • 1/2 teaspoon cumin

Directions
  1. in a large deep frying pan, pour in oil. heat over medium heat
  2. tput in chopped garlic and saute for a minute.add onions
  3. saute until onion are translucent. add spices and crushed tomatoes
  4. cook for about 5-7 minutes. and stir all mixture together
  5. stir in lemon juice .layer potatoes slices on top of suace and
  6. scoop the sauce to cover the potatoes and cook for about 10 mins
  7. add fish on top of potatoes and sauce. ladel tomaoto sauce mix
  8. on top of fish. cover cooking pan lower heat. cook till fish is done
  9. easily flakes when you put a fork in it.
  10. garnish with sliced lemon and little chopped parsely
  11. a chilled bottle or 2 or 3 of sauvignon will do wonders before,during and after........................enjoy
