How to make it

  • Salt and pepper both sides of the pork.
  • Saute onion in the oil and butter.
  • After 5 minutes, add pork and quickly brown each side (3 minutes per side).
  • Add 1/4 C wine and scape up the brown bits in the pan.
  • Mix together remaining 1/4 C wine and the chutney and add it to the pan.
  • Cover and simmer for 5 minutes until the pork is done. Serve with the sauce from the pan.
  • To help the pork cook even more quickly, pound to 1/4 inch thickness between wax paper.
