Stuffed Rockfish Recipe
STUFFED ROCKFISH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Markie Estate in Sachse, Texas in 1982.

Ingredients
  • 2 whole rockfish fillets with skin still intact totaling about 4 pounds
  • 1/4 cup butter
  • 1 small white onion chopped
  • 3 stalks celery chopped
  • 2 eggs beaten
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dry mustard
  • 1/4 cup fresh parsley chopped
  • 2 cups plain bread crumbs
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Place butter in a skillet and melt then sauté onion and celery until tender.
  2. Meanwhile combine eggs, sage, mustard, parsley, bread crumbs, salt and pepper then mix well.
  3. Add onion and celery then mix well.
  4. Place one fillet skin side down on the bottom of a lightly greased baking dish.
  5. Spread stuffing mixture on the fillet and place remaining fillet on top skin side up.
  6. Bake at 350 for 40 minutes.
