One tired Mommy!

    Ok, so I have recently discovered that I am a 'Caregiver'. As if Mommy wasn't enough, now this new title has been bestowed upon me. I have a teen that has very recently been diagnosed with a mental illness that has her going backwards at times. So, the level of care has gone up 100 fold. Here we were ready to have one dating and driving, we havent had a baby sitter in years, and now, we are pretty much prisoners in our own home at times. Ideas for healthy, easy and tasty meals would be very much appreciated.

    My son had therapy five days a week for ten years, and I became the queen of the crock pot and freezer to table meals.

    If you don't let anyone know what you really need, thay can't help, It's amazing how that "stiff upper lip" attitude and "I'm invincable" gets old fast when you are tired and hungry.

    Tina, I cooked up a pound of fettucine last week and dressed it with a pint of Alfredo. I also saved a quart jar of the pasta water to loosen up a leftover serving. I liked it for breakfast as a side to scrambled eggs. Love the idea of investment cooking even now as a grieving survivor, because my zest for cooking kind of waned. Hope to get it back though.
