Light Side Carrot Cake ... healthy and guilt free!

  I made a carrot cake last night, with some adjustments to make it healthier. Yesterday was National Carrot Cake day! I got tired and forgot to publish my article yesterday but that's me... a day late and a dollar short! We have a new editor to impress! lol!
