Just made a tuna casserole for myself...

    Problem has always been that these recipes feed 4-6...what's a single person to do? So, I toyed with the recipe, used a 1.5 quart dish, and basically halved (and in some cases, quartered) the ingredients I found in the recipes. To my surprise, it was quite edible! And I had enough left over for one more serving - lunch tomorrow!

    OK, I'll be frank....I'm not a cooking genius. But I'm open to learning and exploring! Are you?
