    Due to various health reasons, we have had to alter our diet so it did not include animal fats or red meat. Over the years, through a lot of experimentation, we have achieved a lot of things that are included in a normal diet, but without the fat content. With the ever increasing products on the market which have low or no fat, we have been able to incorporate these in place of the standard fatty ingredients. Imagine our surprise and happiness when we perfected our fat free pastry! It opened a whole new area that we could eat, which up until then had been practically eliminated from our diet. When it comes to a good béchamel, a lot of chefs will tell you that it is impossible without good butter. How wrong they can be! We use 0% crème fraise with excellent results. We hope this e-book opens the world for others and also we look forward to hearing from anyone with other recipes or ideas along these lines.

    One thing that we do to cut down on oils is caramelizing onions, garlic, shallots, etc. without the use of oil. All this requires is a bit more patience, as you need to watch over them. We use either water, stock or wine, adding these a little at a time to the pan so they do not stick or burn. It is also necessary to have a set of good non-stick pans, as you can well imagine!

    As we do not use any red meat in our personal diet, we are fortunate that the number of chicken and turkey products is ever increasing. For a nice smokiness in some of our dishes we have discovered a turkey salami which works excellently. We also use a lot of pork loin, as it is virtually fat free. Turkey and chicken breast are also staples in our freezer.

    Although a lot of the recipes in this e-book are low fat or no fat, the fat free section is a collection of some of our favorite recipes that we have developed ourselves. We have included other recipes that are not fat free in this e-book because we do not only cook for ourselves. When catering parties, the food presented must be of a quality that the client appreciates, which in a lot of cases requires the richness that we ourselves are not able to digest. Our philosophy is still to make everything as healthy as possible, but some things just can't be altered.
