Anchovies

    Fillets , or paste . Have used anchovy paste , but never fillets.

    I have not used anchovies due a fish-suspicious husband - LOL! Plus the salt content is a bit high. But I like the zing a few fillets give to pizza. Any new ideas would be appreciated.

    I use anchovy fillets in my Ceasar dressing that I make all the time! You chop them up so finely then scrape your knife over them to make them into a paste. Never had it in a sauce, but I think when used correctly they just add a nice salty flavor, which is what they do in my dressing. Don't think I can stomach them whole on a pizza or anything lol!

    Spaghetti Puttanesca
    This classic pasta recipe is a great store cupboard standby.
    Ingredients
    1 x 400g/14oz tin chopped Tomatoes
    6 Anchovy fillets in Olive Oil
    150g/5oz Black Olives - pitted
    1tbsp Capers
    2 cloves Garlic - chopped
    5 tbsp Extra Virgin Olive Oil
    Fresh flatleaf Parsley - chopped
    Salt and freshly ground Black Pepper
    400g/14oz Spaghetti

    Preparation method
    In a pan, fry the garlic in the olive oil and just before they get golden add the anchovies, capers and olives.
    Stir in the tomatoes, add the salt, freshly ground black pepper and a sprinkling of parsley.
    Cook the spaghetti, drain and add it to the sauce and mix until well combined.

    1 Cucumber - Cut in small 5 mm to 1 cm thick slices - peeled if you prefer
    200g/7oz tin Tuna in Olive Oil - drained and mashed

    Lemon Juice
    ½ small Red Onion - finely chopped
    Salt and freshly ground Black Pepper
    Olives, Capers and Anchovies - finely chopped - to taste
    Mix the tuna with olive oil, parsley, lemon juice and red onion and season with salt and pepper;
    Be adventurous and add some finely chopped olives, capers and anchovies;
    Place the tuna mixture on top of each cucumber slice and serve

    Extra Virgin Olive Oil
    1x180g/6oz tin Tuna in Olive Oil
    2 fillets Anchovies - chopped
    1 clove Garlic - finely sliced
    1 red Chilli - finely sliced
    4 Cherry Tomatoes - chopped
    100g/3½oz Rocket - torn
    1tbsp Capers - rinsed
    ½ Lemon - Juice only - to taste
    Salt and freshly ground Black Pepper
    200g/7oz Bucatini
    Cook the bucatini in a pan of lightly salted water until al dente;
    Meanwhile, over low medium heat, heat 3tbsp oil - use oil from can of Tuna if possible - in a frying pan;
    Add garlic, anchovies, chilli and capers, stirring well to combine together, and cook for some 2 to 3 minutes or so;
    Add the tomatoes, stirring in well to mix everything together;
    Drain the bucatini, saving 200ml cooking water in a jug, and add to the sauce, tossing and combining well until glossy - If necessary, add splashes of the cooking liquid to loosen the mixture a bit;
    Flake in the tuna, add lemon juice to taste and most of the rocket;
    Stir well to warm the tuna and wilt the rocket;
    Season carefully with salt and check for flavour;
    If necessary, add more lemon juice and salt;
    Serve with a drizzle of oil and scattering of rocket.
