Help! Lost recipe

  • billiejo671 15 years ago
    Hi All,
I grew up in AL and moved to the north when I was 14. My grandmother and great grandmother had a cornbread recipe that is lost. I have searched and searched for years and have never found it or a duplicate on the web. They made cornbread very different. The cornbread (I believe) was mixed like traditional cornbread but came out of the oven very different. It had a "shell" on the outside that was golden brown but the inside of the bread was almost like a pancake. Almost raw for want of another word. They served this at lunch and dinner and it was awesome. I so miss them and this recipe. I know it had bacon drippings, southern cornmeal although I don't know what kind and other liquids. They would heat a cast iron skillet with the drippings in the oven like so many other recipes I've found and I thought they would spread drippings on the top before putting in the oven. Anyway, they would cook/bake this and when it came out it was golden "crust" on the outside but the inside was moist/raw looking. This bread was also mostly flat so I guess no egg? Any ideas from my southern group?
    Thank you,
    Billie Jo
