Charcoal or gas.

    When you fire up the grill, do you prefer charcaol or gas?

    Definitely wood or charcoal. We grill a lot of salmon which we do over alder and charcoal mix. For smoking I prefer cherry and apple as I find hickory and mesquite a bit hot tasting. Have always been curious to try pecan or hickory but they don't grow up here.
    But when I want something fast - I fire up the gas grill. I do a lot of veggie on my gas grill - as well as pizzas, flat breads and such.
    What is your preference??

    Depends on the occasion,what is being grilled, and time. I prefer Mesquite for most Beef cuts. Apple for Pork. I do experiment a lot. When Time is short or will be doing a big BBQ, I fire up the gas grill. I do utilize chips of different woods. The more I do this the more I am leaning to the gas grill as I get the taste and smell of the wood, without having to use a lot of it.
