Cheese and Yogurt biscuits

    2 cups whole wheat flour
    1 tbsp baking powder
    1/4 teaspoon salt
    5 tbsp cold butter
    3/4 cup plain yogurt (kefir or buttermilk would work too)
    4 ounces shredded cheddar (recipe suggests brie, gouda, smoked
    mozzerella, or monterey jack in 1/2 inch cubes. I like it better
    with shredded cheese)

    I cut the butter into the flour and then I blend the yogurt in. I
    let it sit for at least 12 hours, then I mix in the rest of the
    ingredients. It if seems too dry after mixing the butter, flour, and
    yogurt then I add a bit more yogurt. You could probably mix all
    the ingredients together and let it sit, but I haven't tried that yet.

    Then when you are ready to bake, Preheat the oven to 450F. Line a baking sheet with parchment
    paper and sprinkle with flour. Sprinkle with 1 tablespoon sesame seeds as well, if desired. (I don't bother)

    Meanwhile roll out the dough on a lightly floured surface into a
    rectangle 3/4 inch thick. Use just enough flour so it isn't sticky.
    Cut with a 2 1/2 inch biscuit cutter or a glass, pushing straight
    down. Use flour on cutter to prevent sticking.

    Place 1/2 inch apart on the baking sheet. Bake for 10 to 14 minutes
    until golden brown.

    The cheese makes these really yummy and they are nice and moist.
