Asado De Puerco

    I made this last weekend and totally forgot to review it!!! I was looking for something to do with stew meat, other than a stew lol. Found this on ingredient search and was happy I had most of the ingredients! I did not have the dried Ancho chilies but did have something called Cascabel chilies which are also a Mexican chili, so I went with it :) I'm assuming it was an okay sub, because this was delicious!! This definitely needs to be tasted as it's cooking and add salt as needed. Was such a nice, rich flavor :) I just ate mine on it's own with a side of Mexican rice and refried beans, but the family ate it in tortillas. Highly recommend!

    I had done some research on dried chilies when I went to make this lol. The heat level of guajillos is a medium level and the heat of cascabel's, which I used are mild. Chipotle's of course are spicy, but it only calls for one. So mine probably came out more mild than the recipe intended, which was good for us because even my little one ate it!

    Mommy - Wow! I can't believe you got your child to eat hot peppers. Mr. J. loves them, and I try to be open, but they burn me..... I usually make him use hot sauce instead of adding hot peppers directly to the food.

    Thanks ladies! Lol Mrs J. both of my kiddos will eat spicy, just not my son as hot as my daughter :)
