Brown Rice And Green Veggie Bowl

I really wanted to try this, but I’m not a big fan of frozen vegetables so I used fresh.
I also used a mixture of wild rice with the brown as I didn’t have quite enough brown rice.
This is a delicious mixture of rice and veggies. I used asparagus, green beans, baby Bok choy( I didn’t have spinach) I had a bit of red and yellw bell peppers, plus cherry tomatoes so I added them in. I do have basil flavoured olive oil so I started with 1 tbsp. Then added one more. Made for a colorful bowl of goodness...
I will make this again as I find it a dish that you can add to, Next time I will add some chicken, or maybe a scrambled egg. To me this is a company worthy lunch and I would serve it to the ladies that I used to work with when they come for lunch.

Nice photo, Manella! I like easy, one bowl meals. I'm with you when it comes to frozen vegetables. I tried a frozen blend with edamame once thinking it would be good and something different. Yuck! Neither one of us liked it and it went in the trash.

Looks so good Manella, my family would love this, but like you, I would use fresh veggies :) Too cool that you had the basil olive oil, I used to have some but it's long been used lol, I'll have to try and make some homemade so it's cheaper than buying!
