German Potato Pancakes

  These are exactly what I was looking for! Something different to go with pork chops, that wasn't mashed or roasted potatoes like we usually have. I did not shred my onion, just chopped very small. It is VERY important to get as much of the water out of the potatoes as you can, I squeezed mine in a dish towel. I never would have thought to serve apple sauce with these, what a pleasant surprise! It was a perfect match :) Thanks Bakerme for the delicious recipe!!
