Hot Cross Buns - Diabetic Friendly

    There was no Recipe Challenge posted for this month, but I made these yummy buns for Good Friday. I'm not sure what makes the recipe diabetic friendly, but maybe it's the sugar substitute and fat-free milk?? I used regular sugar and Lactaid 2% milk and both worked great (more in my review). The whole time I was making them, all I could think of was the children's nursery rhyme: hot cross buns, hot cross buns, one-a-penny, two-a-penny, hot cross buns ;)

    These look so good! I've never made hot cross buns. I'd have to leave out the raisins though...or substitute something. Love that nursery rhyme :P

    I'm not a raisin fan, either, but my husband loves them, so I compromised and used currants, which I don't mind *too* much. I think these would taste good with dried cherries or Craisins - yum!

    I was just thinking last night that I don't recall a theme for April, or that it must have been a given to have Easter themed foods ;)

    I've never made Hot Cross Buns, don't know why as I love them. I agree, this certainly doesn't look diabetic friendly to me.
