Huli Huli Chicken

    *Made for the May 2019 "Tropical" Recipe Challenge*

    We enjoyed this a lot!! I'm not sure if it is true Huli Huli Chicken or not, but we liked it :) I did not use 9-12 lbs. of chicken lol, I used 2 large bone in breasts and 5 drumsticks. I went ahead and kept the sauce amount the same because I marinated my chicken in some of it for about 8 hours. I do wish I had done like Shona on her Huli Huli recipe and boiled the sauce down some to thicken it up. I think it would have made a nicer, stickier coating. Regardless, the marinade soaked into the chicken and it had great flavor throughout. I did char a little of the skin, whoops!! That's what happens when you put me on a charcoal grill lol.

    Those look fantastic, Mommyluvs2cook! Great photo! Good idea to marinate the chicken before hand. Don't apologize for the char marks. That's what makes it look good. My hubby likes a little char on his grilled meats.

    I'm glad you liked it! I saw this recipe listed as Mediterranean Huli Huli chicken as well, perhaps just a different take on it. Good call to marinade it so it added more flavor. :)
