Lentil Soup W Spicy Sausage by Kitchengeeking

This recipes uses two types of Pork for one of the P's (Pork, Peppers and Peas in case you're looking at this for the first time and don't know what we're talking about! ;)
It has bacon and Italian sausage, it says you can use a combo of sweet and spicy sausage, I used mild Italian sausages so it wasn't spicy as the title says. :P Instead of browning and slicing the sausages, I removed them from the casings and dropped them in the soup by little meatballs.
The recipe makes a broth with the veggies and meat, similar to how you'd start with a Risi e Bisi, by making a broth with peas and bacon, for example. But it's like a Zuppa Toscana without the cream or a minestrone type of soup....I can see why he says it's a blend of many recipes, because it is! I love that it uses lentils instead of pasta or beans. And it's hearty and very filling.
I wasn't sure if the broth would be flavorful enough, but it really is, and nice and silky as well. I'm "really cool" and have a tube of concentrated tomato paste, Lol..(look next to tomato paste in the ingredient list ;) so I used 2 tablespoons of that instead of the 1/2 can of regular tomato paste.
Instead of the fresh parsley at the end I used some baby spinach and baby kale for the "greenery".
I think the only thing it needs, because it is so rich, is some added acidity to brighten it up a little. Whether in a can of diced tomatoes, fresh tomatoes or perhaps just a splash of vinegar or lemon juice at the end.
I served it with a grainy bread smothered in garlic butter. I brought out some grated parm, but it's so rich and tasty it really doesn't need it. :)

Thanks Michelle! :) I love tomato paste in the tube. I get really anxious when my tube is low so I always have an extra one stocked in the pantry..lol..;)
