Namasu Rice Salad

    Namasu Rice Salad With Pickled Daikon Radish And Carrots by AnninLondon

    This recipe is a bonus, it's like three recipes in one! The pickled daikon radish and carrots are awesome! I made it a week ago and we snacked on them quite a bit so I had to replenish it, lol ;)
    The dressing is also awesome! I love that it has no sugar, no soy sauce, and it makes a small batch. Only a 1/4 of a cup. I made this a day in advance.

    Initially I was searching for a salad or slaw recipe, but couldn't quite find what I was looking for-- either in the dressing or the vegetables. But when I saw this recipe I loved the sound of the pickled veg and dressing so I decided to make it with napa cabbage instead of rice.
    So when it came time to cut up the cabbage I realised it had gone bad. :( I already had the teriyaki chicken in the oven and couldn't run to the store, so I made it with rice and served it warm. The kids also ate it without a complaint, much to my surprise!
    I didn't think there would be enough dressing, since there's two cups of cooked rice and only a 1/4 cup of dressing, but it was perfect! The flavour of the ginger, garlic and sesame oil really comes through, and just a hint of lime which is nice.
    I was bummed because I thought for sure I had cilantro in the crisper for this recipe, but I forgot I used it on the thai chicken. I did top it with the peanuts and green onions called for--which gives it a nice crunch and freshness. I think sesame seeds would be nice instead of peanuts too. :)

    My hubby loved it cold for his lunch today! If you like sushi you'd probably love it cold too. But for a cold salad I think I'll try this with cabbage instead of rice, and I look forward to trying it that way soon! :)

    Mmmmmm! My mouth is watering! I have been meaning to make a couple of AnnInLondon's recipes (this being one) but haven't gotten around to it. I liked the description that it tastes like "sushi rice." I love sushi rice! Nic pic!

    What a great looking recipe Shona! And a great picture too! I’m going to have to try this someday as I love sushi type rice, not the sushi, but I do like the rice or the ones made with vegetables.

    Thanks Mrs.J! I've been meaning to make this recipe for years, since Ann posted it in AR years ago. I'm glad fate stepped in and made me follow the recipe as written-- before trying it with cabbage. It's a great recipe as is! :)
