    Pork Loin Roast With Garlic Honey Mustard Aioli

    Made for IMI2's August 2018 "Grill" challenge.
    Very good! simple and tasty recipe. Will have sandwiches today with the leftovers using the aioli. We ate ours for dinner, it was too good not to. Instead of using Olive oil to rub the pork loin down with I used mayonnaise so the herbs would stick better and used much more than 2 tsp. of herbs.
    Not the best picture, I'll try to do better.

    I wish I could add another photo here (I did on the recipe). Today I had a sandwich with the leftovers and it was mighty fine. I used a blend of Dijon and Spicy Brown mustards with mayo to make the Aioli.

    Wow, such simple ingredients really make for a great sandwich! Loved this! I was a little confused in the aioli but I ended up eyeballing (since I didn't make the full amount) a good squirt of mayo, 1 clove garlic, a little mustard and honey and a small spoonful of raw horseradish. So good!

    Mommyluvs2cook--I think you are supposed to use a tenderloin. The recipe gives the dimensions for the roast and that describes the shape and size of a tenderloin. I think people get confused when it comes to the word "loin" and do not realize that a tenderloin and a loin roast are not the same thing.
